Where is the photo player getting my pictures from? Can I change the folder?

From your "My Pictures" folder. Currently, there is no way to change this. Look for this in a future update.

How can I have it show more pictures?

The photo player will randomly pick up pictures from all subfolders of "My Pictures". Just add your pictures under "My Pictures" and they will show up in the Photo Player.
